We source our fruit from wonderful old vines grown in sandy soil in Northern California — mourvedre, carignane, cinsault and grenache for a many layered flavor profile. Hand-picked at the moment when the fruit is bright and fresh, the grapes are gently pressed and removed quickly from the skins to just reach the pale salmon color, low alcohol and vibrant acidity.
